Ham and Veg Rice Patties

I’m always looking for easy recipes for “Take a Plate” lunches and Grandchildren visiting for lunch so was quite interested when I saw these Rice Patties on FB as a lunch box filler. I’ve tweaked the original as I felt the recipe wasn’t detailed enough.

Ham & Veg Rice Patties

Rice Patties

Ingredients

3 cups cooked rice
250g shredded ham (or diced bacon, shredded chicken)
1 carrot (grated)
1/4 cup diced capsicum
3 spring onions sliced finely
1 cup grated cheese (plus extra for sprinkling on top)
3 eggs
Sprinkle of plain flour

Start with rice and add veggies. Mix ingredients well. Then add cheese and eggs. Assess the moisture content and add plain flour to suit.

Spray a muffin pan with oil or grease. I used the small pan size.

Spoon mixture for rice patties into the pan, pat it down then sprinkle with grated cheese

Bake the rice patties in a moderate oven 15 – 20 mins checking as needed till rice patties cooked.  Cool the rice patties in the tin for a little bit then careful scrap with knife/spatula and put on plate to finish cooling.

I found the rice patties were still quite loose, damp when cooked but firmed up nicely as they cooled.

Changes you could make to the rice patties – add other veggies like corn kernels, grated zucchini. I find when using ham or bacon I don’t need to add salt but you could add some herbs. You could lay a slice of tomato over the top of rice pattie, sprinkle basil then cheese. Voila!
